Thy contains all the basic elements of the unique production process at Thy Distillery. The carefully selected organic spring barley grown on the fields surrounding us. The mellow sweetness from slow kilning in our malting drums with a gentle touch of our Danish beechwood smoke. Our unique single distillation routine designed to conserve as much flavor as possible from the malted cereals. Finally matured in a mix of bourbon, oloroso and PX casks aiming for a perfect balance of vinous sweetness, warm oak spice and vanilla to match the rich malty character of our spirit.
