This Distillery Edition is a 3½ year old PX sherry hogshead bottled exclusively for our online tasting on May 26, 2023.

A powerful and sweet whisky with a long and smooth finish and a complex flavor profile with notes of dried fruits, cocoa, orange marmalade, herbs, espresso and burnt caramel.

To be released on May 26th at 8pm during our virtual tasting.

A hand-picked sherry cask from the first vintage distilled at Gyrup

The intense caramel malt and the fresh and deep sweet PX sherry cask play beautifully together, creating an incredible depth of flavor with layers of soft, sweet, fruity and dark flavors.

This cask was carefully selected by an international tasting panel among seven casks from the leading vintage of barrels distilled at our new distillery at Gyrup in 2019-2020


This whisky is made from 100% organic grain grown on our farm Gyrup. Both the farm and the distillery are certified organic to ensure clean drinking water and good animal welfare.


When we malt 'cara' malt, we convert the starches in the grain into sugar, which is then roasted. The result is intense roasted and fruity notes that can be smelled throughout the farm when the drums are opened.

Caramel malts are less efficient. They produce less alcohol than the lighter, more efficient malts, but they create flavors and aromas unlike any other whisky.

The sweet PX sherry casks

We source our old PX sherry casks from Jerez in Spain, where they have been aged for 20-30 years to age the sweet Pedro Ximenez sherry made from sun-dried grapes. When the casks are of good quality, the casks give off deep raisin sweetness, fruitiness and hints of chocolate and coffee. At times also a balanced amount of warm vanilla and slight acidity from the oak, depending on the age of the cask.
