Single Cask: Cask 569 | Caramel Malt

A single cask release of our caramel malt whisky, aged for 5½ years in an unusual 225-litre first-fill Oloroso bodega cask and bottled at 52.5% ABV.

The cask came directly from a sherry bodega and has given the whisky an intense, mature Oloroso character with plenty of fruit, caramel, vinous richness and deep earthy notes. These work beautifully with the toasted, herbal character of the caramel malt, resulting in a full-bodied whisky with notes of syrup waffles, burnt caramel, sultanas and tea.

A total of 126 bottles were filled and will be released following our online tasting on 18 September 2026.

Please note: The printing company made an error in the bottle numbering. All labels state “… out of 330”, and some bottles therefore carry a number higher than 126. Only 126 bottles were bottled in total.

Caramel malt is a characterful and flavourful rarity in whisky.

Caramel malt is rarely used in whisky production. Only a handful of distilleries have their own malthouse, allowing them to experiment with the malting process to create flavour in this way. At the same time, caramel malt delivers a lower alcohol yield, as the caramelisation of the grain sugars during malting makes part of the sugar unfermentable.

But we believe it brings great personality and a fascinating flavour profile with dark and herbal notes of black tea, burnt caramel and cocoa, which pair beautifully with the pronounced sherry cask influence found in this whisky.

CERTIFIED ORGANIC

This whisky is made from 100% organic grain grown on our farm, Gyrup. Both the farm and the distillery are certified organic to help protect clean drinking water and ensure high standards of animal welfare.

Caramel malt

When we malt our ‘cara’ malt, the grain starch is converted into sugar, which is then roasted. The result is intense burnt and caramel sweetness, with aromas that fill the entire farm when the malting drums are opened.

Caramel malts are less efficient. They produce less alcohol than lighter, more efficient malts, but in return they create flavours unlike almost any other whisky.

The dark caramel malts used for this whisky create an intensely sweet new make with powerful notes of burnt caramel, cocoa powder, espresso and herbs — in this case leaning towards black tea.
