Our Nordic take on a rye whisky

Our Nordic take on a rye whisky — made from malted spelt, rye, and barley. These grains are a natural part of our organic crop rotation. Inspired by Denmark’s love for rye, rye bread, and ancient wheat varieties, Spelt-Rye showcases how thoughtful grain selection, in-house malting, and experimentation with new mashbills can create an entirely new flavour profile in our whisky.

Matured in new oak casks, Spelt-Rye is a full-bodied and fruity, spicy and floral whisky with an elegant cask balance. Expect aromas of rich vanilla, pink pepper, creamy caramel, citrus, and heather blossom.

CERTIFIED ORGANIC

This whisky is made from 100% organic grain grown on our farm, Gyrup. Both the farm and the distillery are certified organic to ensure clean drinking water and good animal welfare.

New American oak casks

We have our new oak casks built from American white oak, known for imparting plenty of sweetness, honey, and vanilla to the whisky.

Before assembly, the casks are heated and toasted on the inside. This helps shape the wood and draws out a pleasant sweetness and toasted caramel aromas, making them accessible to the whisky as it matures in the cask.

New oak brings bold flavour, colour, and depth to the whisky. We primarily use these casks to mature our grain whiskies made from rye, wheat, and oats — grains that provide a rich body and deep cereal character that pairs beautifully with the bold flavours of fresh oak.
