Oats are a rare grain in whisky production – oily, flavourful, and low-yielding. The result? An intense, creamy new make with loads of grain, nuts, and forest floor.

As a co-owner of a Thy Whisky cask, you join us when the cask is filled, follow its development during our Cask Owners’ Days, and after 4–5 years, enjoy the result in the form of your very own bottles of Thy Whisky.

All around the world, whisky is distilled from barley, corn, rye, and wheat. But oats? All too often, they’re forgotten. And we think that’s a shame.

Because oats offer something truly special. They bring a velvety richness and an intense mouthfeel that stands out clearly from other grains. The flavour is deep and grain-forward – like warm oat porridge – with delicate notes of nuts and a hint of forest floor and earth.

We’ve paired the oats with rye for warmth and spicy pepper, and with barley for balance and fruitiness.

It’s been five years since we first distilled with oats. Since then, we’ve only bottled two small casks – both matured in new oak. This time, we’re inviting you to join us.

New american oak

Just like our Spelt-Rye, this oat whisky has been matured in new oak casks, adding vanilla sweetness and spice from the fresh wood. It pairs beautifully with the warm peppery sweetness of the rye and the creamy richness and earthy notes from the oats.

Malted oats

Oats are an unusual grain for whisky production. They’re high in protein and oils, which results in a relatively low yield – but with lots of flavour and richness. We malt the oats just like we do with barley or rye. The result is a full-bodied new make spirit, packed with grain flavour, a hint of nuttiness, and a touch of earthy forest floor.
