For us, the combination of beechwood smoke and oloroso sherry casks is simply magical. It has become a signature part of our whisky and has helped put both Thy and Denmark on the whisky world map.

Now you can become co-owner of your very own cask of beechwood-smoked single malt whisky, set to age in a small oloroso sherry cask for 4–5 years in our warehouse and bottled at cask strength.

The 60-litre oloroso cask brings intense notes of dried fruits, nuts and a rich, vinous sweetness to the smoky whisky.

Casks will be filled September 6 2026.

As a cask owner at Thy Whisky, you’re someone special. It’s about much more than the whisky you buy. During maturation, we invite you to our Cask Owners’ Days. These are gatherings of 200–300 happy friends – sharing good times, geeking out, and tasting the whisky we’re crafting together.

When you buy your share, everything is included. Cask owner events, samples, bottling, taxes and insurance are all part of it. And if you pick up your bottles during a Cask Owners’ Day, we’ll even cover the shipping.

The magic begins when beechwood smoke meets oloroso sherry casks

For us in Denmark, beechwood smoke feels deeply familiar. The moment you bring a glass of our beechwood-smoked whisky to your nose, you are met by a warm, gentle and inviting smoke, like sitting by a fireplace or catching the scent from a smokehouse along the west coast or a distant bonfire in a beech forest.

When the oily, warming smoke meets the vinous sweetness of oloroso sherry and is left to age in the cask, it creates an unusually sweet and full-bodied (“meaty”) depth in the whisky. A profile that many find inviting, even those who are not usually drawn to peated whisky.

In the world of whisky, smoke is often associated with peat. But smoke can take many forms. In Denmark, we have a long tradition of using beechwood for smoking. It gives a softer, rounder and more familiar kind of smoke. This is the tradition we bring into our whisky.
