Become a co-owner of a Thy Whisky cask and create your own organic Danish single malt whisky. Join us as we fill the cask, follow the development, and enjoy the result of your own bottles of Thy Whisky when we tap the cask after 5 years of aging.

Revived Danish heritage barley
Together with skilled breeders, we have brought the Danish heritage variety Langeland barley back to life after 100 years of hibernation in the Nordic gene bank. The variety tastes fantastic and gives a very oily distillate full of flavourful esters to our whisky. The 2022 harvest of Langeland barley has produced a fresh, "green" and sweet distillate with notes of lime/citrus, freshly cut clover grass, dusty grain and a slight malt sweetness.
Maturing on Spelt-Rye casks

We fill the Langeland barley in a couple of rye barrels of 64 litres. This is the 'second fill' after the spelt-rye whisky. The casks have most recently aged whisky of the Imperial barley variety, including casks 124-2 and 131-2 and Thy Whisky No 18 - Kornmod, which we bottled in the spring of 2022 after three years. We expect the casks to give a light impression of pepper, fragrant summer apples, vanilla and a little oak over 5 years, still leaving plenty of room for the flavours of the soft Langeland barley.
