What did whisky taste like 100 years ago? If it had been made in Denmark, it might have tasted like this.

The cask is being filled with spirit made from our 100-year-old Imperial barley, revived from a handful of grains preserved in the Nordic Gene Bank and grown on our own fields. It is left to age in a fresh 125-litre ex-bourbon cask.

An honest expression, where the unique character of the Imperial barley comes through clearly, with notes of dusty grain, citrus, an oily richness and fruitiness, while the cask slowly builds layers of vanilla, honey and oak spice around it.

As a co-owner of a Thy Whisky cask, you take part as we fill the cask, follow its development at our cask owner days, and after 6–7 years of ageing, enjoy the result in your own bottles of Thy Whisky with roots reaching back to the early 1900s.

As a cask owner at Thy Whisky, you’re someone special. It’s about much more than the whisky you buy. During maturation, we invite you to our Cask Owners’ Days. These are gatherings of 200–300 happy friends – sharing good times, geeking out, and tasting the whisky we’re crafting together.

When you buy your share, everything is included. Cask owner events, samples, bottling, taxes and insurance are all part of it. And if you pick up your bottles during a Cask Owners’ Day, we’ll even cover the shipping.

What might a Danish whisky have tasted like 100 years ago? – Imperial barley and bourbon casks

In the early 1900s, what we today know as single malt whisky was made from local barley varieties, each with their own distinct character and flavour. That is no longer the case. We are among the few distilleries in the world working with grain grown on our own fields.

Our 100-year-old Imperial barley has been revived from a handful of grains preserved in the Nordic Gene Bank and is now grown on our estate. It stands apart from modern barley varieties bred for yield and consistency, with its pronounced citrus notes, a light dusty grain character, and a rich, almost oily mouthfeel.

So if whisky had been made in the early 1900s, it might have tasted like this.
