Two handpicked sherry casks

The whisky brings together two of our best PX sherry casks with a good level of beechwood smoke. Together, they create a whisky that is bigger, more balanced and complex than either cask on its own, while retaining the unique and individual character of the casks that we know from single cask whisky.

CERTIFIED ORGANIC

This whisky is made from 100% organic grain grown on our farm, Gyrup. Both the farm and the distillery are certified organic to ensure clean drinking water and good animal welfare.

Beechwood smoke

Smoking the malt for whisky is a powerful way to enhance flavour. In the spirit of traditional Danish smokehouses, we primarily use beechwood instead of peat. Beech is a more sustainable smoke source — but it also delivers a warm, sweet, ashy and full-bodied smoke that we’ve come to love.
