This bottling is a vatting of two 6-year-old casks from our warehouse. A bourbon cask, forming the backbone of the whisky with its light and bright aromas, and a second-fill oloroso cask adding a deeper fruit character and extra body to the final expression.

The result is a delicate and beautifully balanced whisky with light aromas of vanilla, acacia honey, lemonade, apple, peach and pear, and a hint of oak spice and white pepper.

This is a vatting of two 6-year-old casks from our warehouse: a bourbon cask that forms the majority of the whisky with light and bright aromas, and a second-fill Oloroso cask that adds a touch more depth to the fruit and body of the final whisky.

The result is a delicate and beautifully balanced whisky with light notes of vanilla, acacia honey, lemonade, apple, peach, and pear — rounded off with a hint of oak spice and white pepper.

CERTIFIED ORGANIC

This whisky is made from 100% organic grain grown on our farm, Gyrup. Both the farm and the distillery are certified organic to ensure clean drinking water and good animal welfare.

The quiet work of the bourbon casks

We source our bourbon casks from Heaven Hill Distillery in Kentucky, USA. These casks contribute a gentle fruitiness and vanilla sweetness to the whisky without overpowering the grain or the beechwood-smoked malt. For this release, we used whisky from both a 7-year-old quarter cask and a 6-year-old barrel.

Maturing whisky in bourbon casks is a matter of patience — but the payoff is a beautiful, fruity sweetness as the oak tannins slowly oxidise into fruity esters.
