Dryer smokes from large wild moss

The peat originates from St. Vildmose in North Jutland. It gives a classic dryer smoke in the style of it
Scottish, yet with its unique soft Danish touch. The smoke intensity is nicely in
the soft end.

Stored on bourbon casks

We fill the dry -smoked New Make on a couple of 'First Fill' Bourbon Quarter Casks on 125 liters.
We expect the dishes over 5-6 years of age give plenty of vanilla and light honey sweetness balanced
of a little tannins from the oak tree. The sweetness of the dish and the complexity of the distillate expect we will give
one partly classic bourbon cask aged whisky, But with a characterful and moderate
Smoke intensity from the peat.
