What did whisky taste like 100 years ago? If it had been made in Denmark, it might have tasted like this.

The cask is being filled with spirit made from our 100-year-old Imperial barley, revived from a handful of grains preserved in the Nordic Gene Bank and grown in our own fields. It is left to age in a fresh 125-litre ex-bourbon cask.

An honest expression, where the unique character of the Imperial barley comes through clearly, with notes of dusty grain, citrus, an oily richness and fruitiness, while the cask slowly builds layers of vanilla, honey and oak spice around it.

As a co-owner of a Thy Whisky cask, you take part as we fill the cask, follow its development at our cask owner days, and after 6–7 years of ageing, enjoy the result in your own bottles of Thy Whisky with roots reaching back to the early 1900s.

Important: This is a Danish cask share. Cask samples, cask owner days and the final bottles are to be collected at the distillery in Thy.
