Our first bottling of oat whisky with only 56 bottles. Soft and spicy whisky with earthy notes and oily mouthfeel from oats which make up more than 50 % of the whisky. Single distilled on a mashbill of oats, rye and barley. Matured in a single cask of new oak for over four years.

Something as rare as an oat whisky

Around the world there are plenty of whisky on barley, corn, wheat and rye, but oats are often overlooked and very rarely used for pot still distilled whisky.

The oats are included in our organic crop rotation almost every year. So why not experiement with an oat whisky?

Oats contain more protein, fat and dietary fiber than the other cereals, and provide a relatively smaller extract of sugar that can be converted into ethanol. But there is plenty of flavor to pick up.

The taste of oats in a distillate is distinctly different from other cereals. It gives a milky and rich earthy mouthfeel and a feeling of oatmeal. After maturation in casks it becomes rich and full-bodied.

We have for this whisky chosen to mix the oat with rye for a little pepper and heat and barley for balance and fruitfulness.

Certified organic

This whisky is made from 100% organic grain cultivated on our farm Gyrup. Both the farm and the distillery is certified organic to ensure clean drinking water and good animal welfare.

New oak barrels

Like our Spelt-Rye is this oat whisky matured in new oak barrels that add vanilla sweetness and spice from the fresh oak that fits really well with the peppery sweetness from the rye and the creamy texture and earthy notes from the oats.
