Barley, Oat & Rye

This whisky brings together three casks distilled from several different grains harvested in 2019 from the fields surrounding our farm. Each grain has been grown with its own purpose and contributes its own distinct character to the final expression.

The rye brings lively spice and a touch of pepper, the oats add a soft and creamy texture, while barley malted according to a Vienna malt recipe contributes warm, nutty notes. Pale malted barley ties everything together, creating balance and elegance in the whisky.

The whisky has matured in bourbon casks and French oak apple eiswein casks from Danish Cold Hand Winery, adding notes of vanilla, ripe fruit and a rounded depth, where field and cask meet in harmonious interplay.

Bottled at 48.5% vol., the whisky is light and fruity with a soft and creamy mouthfeel, while the character of each individual grain remains beautifully balanced.

CERTIFIED ORGANIC

This whisky is made from 100% organic grain grown on our farm, Gyrup. Both the farm and the distillery are certified organic to ensure clean drinking water and good animal welfare.

Bourbon cask maturation with a touch of apple wine and French oak

The bourbon casks are sourced from Heaven Hill Distillery in Kentucky, USA. They add a fruity and gently spiced character to the whisky, with notes of honey and vanilla sweetness, without dominating or taking focus away from the grain.

One of the casks in this whisky began its maturation in Apple Eiswein casks from Danish Cold Hand Winery, made from French oak, before being finished in a bourbon cask. The apple wine brings bright notes of summer apples, while the French oak adds light spice, bringing freshness and high notes to the sweeter bourbon casks.
