Danish Oak is our first attempt at using Danish oak casks in interplay with our Spelt-Rye whisky, made from malted rye, barley, and spelt.

The result is a more intense variation of our Spelt-Rye, with deeper notes of vanilla and baking spices, and a fruitiness of red berries.

When our Spelt-Rye meets Danish oak

Our Nordic take on a rye whisky, crafted from malted spelt, rye and barley — grains that are a natural part of our organic crop rotation. Inspired by the Danish love of rye and traditional rye bread, as well as old wheat varieties, Spelt-Rye shows how careful grain selection, our own malthouse, and experiments with new mashbills can create an entirely new flavour profile for our whisky.

After maturation in Danish oak and bourbon casks, the whisky develops deeper notes of vanilla, baking spices, caramel and red berries, playing in harmony with the spicy and floral character of our Spelt-Rye.

CERTIFIED ORGANIC

This whisky is made from 100% organic grain grown on our farm, Gyrup. Both the farm and the distillery are certified organic to ensure clean drinking water and good animal welfare.

New Danish oak cask

Den Gamle By in Aarhus has helped us build a 53-litre oak cask made from Danish oak — more specifically from Jutland oak sourced near Silkeborg.

Danish oak carries deep, pronounced tannins that leave a bold imprint on the whisky. This bottling of Spelt-Rye therefore combines casks of bourbon, new American oak, and Danish oak. The result is a whisky with a distinct oak influence, balanced by a pleasant fruitiness.
