Barley, Oat & Rye
This whisky brings together three casks distilled from several different grains harvested in 2019 from the fields surrounding our farm. Each grain has been grown with its own purpose and contributes its own distinct character to the final expression.
The rye brings lively spice and a touch of pepper, the oats add a soft and creamy texture, while barley malted according to a Vienna malt recipe contributes warm, nutty notes. Pale malted barley ties everything together, creating balance and elegance in the whisky.
The whisky has matured in bourbon casks and French oak apple eiswein casks from Danish Cold Hand Winery, adding notes of vanilla, ripe fruit and a rounded depth, where field and cask meet in harmonious interplay.
Bottled at 48.5% vol., the whisky is light and fruity with a soft and creamy mouthfeel, while the character of each individual grain remains beautifully balanced.
