OUR INTERPRETATION OF A NORDIC RYE

Our Nordic interpretation of a rye whisky made with all malted spelt, rye and barley. Utilizing several of the grains of our organic crop rotation, integral to regenerative farming principles, and in part inspired by the long-going Danish tradition for rye bread and new found affection for ancient wheats in baking. Spelt-Rye is showcasing what a careful organic grain selection, in-house malting and exploring new mashbills can do for a whisky.

As certified organic farmers we admit to careful regenerative farming priciples using cover crops and crop rotation to preserve soil fertility, biodiversity and safekeep the precious groundwater reserve beneath our land.

For SPELT-RYE, we make use of several grains from our crop rotation. This makes a complex, sweet, spicy and floral interpretation of smooth Nordic rye whisky.

Malted Rye whisky

Craft malting is a key component to the quality and flavour in our whisky. We designed our own malting drums to experiment with malting recipes and work with whatever grain we like. Flexibility is the key to exploration, and having our own malthouse makes us able to break out of the straitjacket of conformity.
