Become co-owner of a cask of Thy Whisky and create your own organic Danish single malt whisky. Take part when we fill the cask, follow its development, and enjoy the result with your own bottles of Thy Whisky when we bottle it after 6–8 years of maturation.

A Truly Special Cask

Once again this year, we’ve sourced a few rare 80–100-year-old 500-litre sherry butts. The casks come from Bodegas Delgado in the Montilla-Moriles region of southern Spain.

For this summer’s cask share, we’ve selected a Pedro Ximénez sherry butt—large, dark and full of character. We’re filling it with new make spirit distilled from Langeland barley, a 100-year-old Danish heritage variety grown on our own organic fields here in Thy.

PX sherry is known for its intense sweetness and rich aromas of dried fruit, syrup and oak. This particular cask has held onto Spanish flavour secrets for decades—and now it’s ready to infuse our whisky with new life.

We fill 6 litres per share, dividing the cask into 80 shares in total. Each share will yield a minimum of 8 bottles of finished whisky, bottled in 50 cl bottles.

The sheer size of the cask means the whisky matures slowly, even as the sherry influence is bold and deep. Our goal is to bottle it when the cask’s character is in perfect harmony with the flavourful new make. We’ll be tasting along the way, and expect the whisky to be bottled at cask strength after 6–8 years.

100 years old PX sherry butt

Old, untouched sherry casks are something truly special. Once again this year, we've brought home a few rare 80–100-year-old 500-litre sherry butts. The casks come from Bodegas Delgado in the Montilla-Moriles region of southern Spain. For a century, they’ve rested in Solera in the humid cellars. Now, we’re making whisky with them.

PX is a sweet and dark style of sherry that brings intense depth and warmth to the whisky, with notes of dried figs, raisins, dark caramel and spiced oak. The result is a vinous and silky-smooth taste that unites sweetness and complexity in a single, elegant dram.

Langeland barley From the Nordic Genbank

Together with skilled breeders, we’ve revived the barley variety Langeland after a 100-year slumber in the Nordic gene bank. It’s not efficient—but it tastes amazing.

Langeland barley delivers a truly unique flavour and mouthfeel. The new make is oily and soft, with aromas of grain, forest floor and a hint of dried orange. It promises to pair beautifully with the deep raisin sweetness, caramel, brown sugar, aged oak and perhaps a touch of earthiness that we expect the cask to contribute.
