The product of our fields

The raw material forms the core of our whisky. This is where the taste starts. Our distillery is located at our family farm Gyrup. Here our family has been for 300 years. Eel whisky is made on grain, We have cultivated ourselves.

A modern one organic agriculture

Thy Whisky Distillery lies in the heart of our farm, Gyrup. farm Have we driven the last 8 generations.

We have almost 500 ha. Here we grow grain to ours malt and whisky, As well as feed for our dairy cows.

The fertility of the soil

All of our fields are cultivated organic - It's important to us. Instead of using pesticides and fertilizers, we use the crop change, post -crops and fertilizers from our cows to constantly improve the soil's fertility.

We rarely sow the same two consecutive years in our fields. Instead, we alternate over seven years between clover grass, horse beans, wheat, oats, rye and barley to ours whisky.

The clover grass and the horse beans are feed for our animals, but contribute to the fertility of the field by binding nitrogen from the air in the soil that the grain can use later.

Malt barley

We use modern and old varieties of barley. Selected for their cultivation properties in the field and their taste in the finished whisky.

Modern varieties

Evergreen

2-raded spring barley.

The most popular black for cultivation of organic malt barley in Denmark for many years.

Laureate

2-raded spring barley.

A new, effective generation of malt barley with good cultivation properties that are gaining ground in the fields of Northern Europe.

Odyssey

2-raded spring barley.

A further development of ancient British malt barley varieties. The flavor profile is full and the variety provides well in the field and in the distillery.

Power

2-raded spring barley.

Power is of recent descent and had some spread in Denmark in the 00s. Power was used for several of our first whiskeys, including Thy Whisky No. 1 - Kræn dune.

Propino

2-raded spring barley.

Propino was previously a very widespread malt barley variety in Denmark. Cultivated a single year (2012) in our fields.

Wish

2-raded spring barley.

Old varieties

Erhard Fredriksen

The 6-Raded spring barley was highlighting in the Danish fields in the early 1800s. Known from 'Bonderøven' at DR.

Imperial

Old Danish Sort of barley. Was widespread in the Danish fields in the late 1800s, but in the 1920s was replaced by other higher yielding varieties.

The taste profile is unlike anything else we know. Clear freshness and citrus notes often characterize it, while in other vintages it has a more spicy touch.

Langelandsbyg

Originally from the Danish island of Langeland. This country of old Danish type dates from the late 1800s.

We have propagated it together with several other old Danish lands, the fact that they have been stored in the Nordic Genbank.

A circuit with milk and whisky

To cultivate fields organic And sustainably means that we have to exploit the entire field's potential, but at the same time give it back what we take.

Our cows make it possible. The animals are included in the natural orbit of farm. They eat the clover grass, produce milk and give back fertilizer which we can return to the field.

The milk that the cows give us every day we make with Thise and Irma to Farm milk from Gyrup. It does not mix with other milk and has a natural fat percentage. Traceable to our fields - exactly like ours whisky.
