A wonderful double matured single cask of our spelt-rye whisky based on malted rye, spelt and barley. Aromas of sichuan pepper, fruit caramel, creme brûlée, figs, plum marmalade, dried cranberries and a touch of dark chocolate.

Our nordic take on a single cask nordic rye

Our Nordic take on a rye whisky, crafted from malted spelt, rye, and barley.
Grains that are an integral part of our organic crop rotation. Inspired by the Danish love for rye, rye bread, and ancient wheat varieties. Spelt-Rye shows how careful grain selection, our own malting, and experiments with new mashbills can create an entirely new flavour profile in whisky.

Matured in new American oak casks, Spelt-Rye is a full-bodied and fruity, spicy and floral whisky with an elegant cask balance. Aromas of rich vanilla, pink peppercorn, toffee, citrus, and heather blossom.

Certified organic

This whisky is created by 100% organic grain Cultivated on ours farm Gyrup. Boats farm and the distillery is certified organic to ensure clean drinking water and good animal welfare.

As organic farmers, we follow natural regenerative farming principles, using cover crops and a dedicated crop rotation to preserve soil fertility, biodiversity, and protect the precious groundwater beneath our land.
