The whisky is balanced between light, fruity cask notes of apple and peach, and a meaty, warming smoke profile with a pleasant touch of soot and mint.

Second fill in smoked sherry casks

The whisky is vatted from the 2nd fill of four small oloroso casks, which have also previously matured our beechwood-smoked whisky. On their second fill, the casks bring lighter fruits in the direction of red apples and white peaches, with a light touch of mint and baking spices rather than the more pronounced oak spice of a first fill. The flavours are well balanced and the intensity is gentle.

At the same time, the casks’ history with beechwood smoke builds on the smoke profile. The spirit filled into them was only lightly smoked, but after 4½ years of maturation, the smoke appears meaty, full-bodied and sooty in this bottling.

This whisky is made from 100% organic grains grown on our farm, Gyrup. Both the farm and the distillery are certified organic to help protect clean drinking water and ensure good animal welfare.

Beechwood smoke

Smoking malt for whisky is a powerful flavour booster. Following Danish smokehouse traditions, we primarily use beechwood instead of peat. Beechwood is a more sustainable source of smoke, but it also delivers a warm, sweet, charred and full-bodied smoke that we have come to love.
