Last year we passed 40.000 liters of new make added to the warehouse, and we hope to be adding to these numbers in 2022.

Every week we are brewing distilling around 10.000 liters of wort - enough to add a handfull of new casks to the warehouse every week.

New release of Spelt-Rye this Wednesday as part of

New release of Spelt-Rye this Wednesday as part of our virtual tasting.

Spelt-Rye is our Nordic take on a rye whisky, made from three traditional Danish grains: rye, barley and spelt. All grown organically on our fields in Thy and malted in our malthouse to enhance flavor and extract. The malted rye creates a rich flavoured, sweet and peppery ‘new make’ combined with light fruity, floral and earthy notes from the spelt. Spelt-Rye is matured on new oak casks made from american white oak, which adds honey sweetness, vanilla, varm spices and balanced tannins to whisky.

It is a familiar yet untraditional ‘rye’ with a clear Nordic touch and a complex aroma and flavor. The ‘nose’ of this whisky reminds us of the beautiful endless stretches of flowering heather along the Danish North Sea coastline.

Release on Wednesday online, around 10 PM CET

On Wednesday, we will be hosting a virtual tasting, focusing on casks of american oak.

We will be tasting both rye whiskies on new oak and samples of bourbon casks. For example this one, a beechwood smoked single malt of a single bourbon quarter casks. To us this is a great example of what a beechwood smoked whisky can become when it let unspoiled to mature on a fresh bourbon cask.

Actually we bottled the cask as a distillery edition. Yielding only 127 bottles, this cask-strenght bottling will be released after the tasting on our webshop.
